Quick and Easy Zucchini

The summer squash harvest is beginning. A really quick and easy way to serve zucchini is just to slice and saute. Slice, sprinkle with salt and let sit for 30 minutes to an hour to draw the water out of it. Rinse well and pat dry. Heat a little bit of olive oil and saute until done. Yum!

  1. Looks delicious! I will have to try this. We are big fans of stir-fry, which is where a lot of our zukes go. My zukes are a little behind yours... but soon I expect to be buried!

  2. Actually April, these aren't my zukes - they are from my CSA. I didn't plant any this year because I knew I would get plenty from the CSA and we all know how prolific they can be. But, being a gardening blog I thought it was appropriate to show how to cook them since many others are growing them.
